Originally from Brazil, Chef Tiago is a seasoned culinarian boasting an impressive 18 years of experience across the culinary landscape. His journey into the world of cuisine began at the age of 13 when he relocated to Spain with dreams of pursuing a career as a professional soccer player. However, it was in the kitchen that he discovered his true passion for food. Tiago's culinary odyssey led him to New York City, where he enrolled at the Culinary Institute of America. There, he had the opportunity to work alongside renowned celebrity chefs, contributing to the launch of the Giorgio Armani Restaurant and gaining valuable experience in prestigious hotels such as The Standard Hotel, Hilton Hotel, and The W. Eight years ago, captivated by the charm of St. Augustine, Chef Tiago made it his home. From owning and operating a French Bistro at the Lightner Museum to launching his own Italian restaurant, Fratelli’s, and taking on the role of Chef Tournant at TPC Sawgrass, Tiago has left an indelible mark on the local culinary scene. His commitment to seasonal menus, a clean kitchen, and the belief that every team member plays a crucial role mirrors his philosophy that creating a dish is akin to orchestrating a harmonious team effort. Now, as the Executive Chef of The Hangar One Bistro, Chef Tiago continues to infuse his fusion cuisine into the menu, showcasing his culinary prowess. Alongside his wife Dennise, their two children, Tiago & Victoria, and their Border Collie, Rocky, Chef Tiago brings his love for soccer, martial arts, outdoor activities, and family time to the World Golf Village family.
